Spiced Boiled Peanuts

My husband's family is from the South, and boiled peanuts are one of his favorite snacks.  In California raw peanuts are impossible to find.  You have to order them online, and finding a reputable place to order from is hard.  Today on Saveur, the magazine posted a recipe for Spiced Boiled Peanuts.  I thought I would share the recipe, because even our family in the South would love to have an actual recipe.  You see, most of these good recipes are verbal, and you have directions like a handful of this and a pinch of that.  I'm looking forward to making these soon.  They will instantly bring back lots of childhood memories for my husband.  Boiled peanuts and a cold beer, is a great way to enjoy a summer afternoon. 


SERVES 4–6
INGREDIENTS
2 lb. raw peanuts (available from Nuts Online)
1 cup kosher salt
¼ cup sugar
1 tbsp. coriander seeds
1 tbsp. fennel seeds
1 tbsp. whole black peppercorns
1 tbsp. crushed red chile flakes
1 tbsp. hot paprika
2 bay leaves
2 cloves garlic, crushed
1 stick cinnamon

INSTRUCTIONS

Combine all ingredients and 1 gallon water in an 8-qt. pot; boil. Reduce heat to medium-low; cook, stirring occasionally, until peanuts are tender, about 4 hours. Cool in liquid before serving.
